Bar Manager

JOB DESCRIPTION

ABOUT US:
Cicerone Cucina Romana is a roman style restaurant located in the heart of Surry Hills, focused on pasta and pizza
with a detailed cocktail and wine list. The venue operates Wednesday to Sunday dinner only, supported by a regular
community and a knit team, we pride of a premium and selected product, the service is relaxed but detailed and
focused on guest experience.


BUSINESS HOURS:
Wednesday to Sunday 5:30pm to 10pm


KEY RESPONSIBILITIES:

  • Implement and monitor systems and procedures to ensure efficient bar operations
  • Maintain high standards of cleanliness, organisation, and stock control
  • Execute cocktails and develop creative menus and updates that align with the brand's identity
  • Foster a positive, customer-focused culture within the bar.
  • Implement efficient bar operations, including inventory management and daily/weekly orders
  • Manage all beverage orders, maintaining COGs within budget

Please note: You should have a minimum 2 years previous experience in the above or similar roles.


REQUIREMENTS

REQUIREMENTS:

  • An experienced Cocktail Bar Manager or a strong bar supervisor looking to take the next step.
  • Immaculate personal presentation.
  • Extensive knowledge of mixology, including a strong understanding of flavour profiles and cocktail techniques, as well as strong understanding of bar operations
  • Exceptional customer service skills, with a passion for creating memorable experiences for guests.
  • Strong organizational and time management abilities, with the capacity to handle multiple tasks and prioritize effectively.
  • Excellent communication and interpersonal skills, with the ability to build relationships with both staff and customers.
  • A valid Responsible Service of Alcohol (RSA) certificate
  • Wine knowledge is a plus
